                        • o 100g white chocolate.
                        • o 10g strong coffee grounds.
                        • o 1 tablespoon of coffee extract.

                        Mascarpone Cream:

                        • o 190g mascarpone cheese.
                        • o 50g egg whites.
                        • o 35g sugar.
                        • o 30g egg yolks.
                        • o 35g sugar.

                          • Mix all ingredients together and set aside.

                          Mascarpone Cream:

                            Instructions:

                            • In a bowl over a double boiler, whisk egg yolks and sugar until they become a light-yellow color.
                            • Remove from heat and let cool. Mix with mascarpone cheese.
                            • In a separate bowl, whisk 50g of egg whites and 30g of sugar to form stiff peaks. Gently fold both mixtures together.

                            Coffee Ganache:

                              Instructions:

                              • In a saucepan over low heat, mix coffee grounds and cream.
                              • Once mixed, add white chocolate and stir until melted.

                              Mascarpone Cream:

                                • In a bowl over a double boiler, whisk egg yolks and sugar until they become a light-yellow color.

                                Notes

                                Assembly:
                                1. Dip ladyfingers in coffee syrup for less than 5 seconds and layer on the bottom of a dish. Spread mascarpone cream on top. Repeat this process for at least 4 layers (grate dark chocolate between each layer for added flavor).
                                2. Once finished, pipe coffee ganache on top using a piping bag.
                                3. Pipe mascarpone cream on top of the coffee ganache.
                                4. Decorate with cocoa powder as desired.
