Ingredients:
- 625 g water.
- 9 g yeast.
- 830 g flour.
- 20 g whole wheat flour.
- 20 g corn flour.
- 22 g honey.
- o 22 g salt.

Preparation:
Mix 425 ml of water with 1 package of yeast, 370 g of flour, corn flour, whole wheat flour, and honey.
Ferment for 1 hour and 50 minutes.
For the dough:

In a mixer, add the sponge and the remaining flour, water, and salt. Mix well and knead until it begins to come off the sides. Then, transfer to a bowl with olive oil and let it ferment for 45 minutes.
Deflate the dough, fold it four times towards itself, and let it ferment for another 45 minutes.
Deflate the dough again and divide it into 6 balls of 230 g each. Shape them into balls and place them on a tray. Let them rest covered and floured for 5 minutes.
Then, transfer them to a container with a lid and let them rest for 1 hour before using them.
