  • 625 g water.
  • 9 g yeast.
  • 830 g flour.
  • 20 g whole wheat flour.
  • 20 g corn flour.
  • 22 g honey.
  • o 22 g salt.
  • o Olive oil.

Instructions
 

For the sponge:

    Preparation:

    • Mix 425 ml of water with 1 package of yeast, 370 g of flour, corn flour, whole wheat flour, and honey.
    • Ferment for 1 hour and 50 minutes.
    • For the dough:

    Preparation:

    • In a mixer, add the sponge and the remaining flour, water, and salt. Mix well and knead until it begins to come off the sides. Then, transfer to a bowl with olive oil and let it ferment for 45 minutes.
    • Deflate the dough, fold it four times towards itself, and let it ferment for another 45 minutes.
    • Deflate the dough again and divide it into 6 balls of 230 g each. Shape them into balls and place them on a tray. Let them rest covered and floured for 5 minutes.
    • Then, transfer them to a container with a lid and let them rest for 1 hour before using them.
